- 250gPineapple (chopped)

Method

Combine the dried hibiscus flowers, fresh ginger, clove, and water in a pot and simmer around 95°C (205°F) until the liquid is deeply colored and fragrant.

Strain the drink into a jug while still warm.

Squeeze in the lemon and stir in the white sugar until dissolved.

Blend the pineapple with a little of the strained drink until smooth, then stir it back into the jug.

Chill thoroughly and serve over ice.
