Method

Bring the water to a gentle boil at 100°C (212°F).

Add the dried hibiscus flowers and fresh ginger, then simmer briefly so the color and flavor infuse the liquid.

Remove from the heat, cover, and let the infusion steep until the flavor is full and the liquid is a deep red.

Strain out the solids and stir in the white sugar while the drink is still warm so it dissolves fully.
