Method

Combine the water, dried hibiscus flowers, fresh ginger, and clove in a pot and bring to a boil at 100°C (212°F).

Reduce to a gentle simmer at about 95°C (203°F) and cook until the liquid is deeply colored and fragrant.

Add the pineapple and simmer briefly so it perfumes the drink.

Remove from the heat, stir in the white sugar until dissolved, and let the drink cool.

Strain well, chill, and serve cold.
