    Preheat the oven to 200°C (392°F).

    Mix the onion, tomato, garlic, lime juice, coconut oil, and salt in a bowl.

    Place the barramundi on the banana leaves and spoon the tomato mixture over the fish.

    Wrap the leaf tightly around the fish to form sealed parcels and place them on a baking tray.

    Roast until the barramundi flakes easily and reaches 63°C (145°F) at the thickest part.
