Heat the oven to 190°C (375°F). Soften the banana leaves briefly over low heat so they bend without splitting.

Mix the coconut milk, onion, garlic, fresh ginger, lime juice, salt, and black pepper.

Brush the banana leaves with coconut oil. Distribute the barramundi evenly among the leaves and spoon over the coconut mixture.

Fold the leaves into tight parcels and place them seam-side down on a baking tray.

Bake until the barramundi is opaque, flakes easily, and reaches 63°C (145°F). Rest briefly before opening the parcels carefully.
