Method

Preheat a grill or oven to 200°C (400°F).

Rub the grouper with the coconut oil, then season it with the salt and black pepper. Top each portion with the onion, garlic, and fresh ginger.

Soften the banana leaves briefly over heat or in hot water so they bend without tearing, then wrap each fish portion into a tight parcel.

Cook the parcels until the grouper is opaque, flakes easily, and reaches 63°C (145°F) in the center.
