    Place the grated potato in a clean towel and squeeze out as much liquid as possible. Transfer it to a bowl and mix with the onion, eggs, all-purpose flour, salt, and black pepper until a thick batter forms.

    Heat a thin layer of sunflower oil in a frying pan over medium heat until hot, about 175°C (350°F).

    Spoon in portions of the batter and flatten them gently into pancakes. Fry until the bottoms are deep golden and crisp, then turn and fry the other side until cooked through.

    Transfer the pancakes to a plate lined with paper towel for a moment, then serve hot with the sour cream.
