Method

Combine the all-purpose flour and salt in a bowl. Add the egg and water, then knead until smooth. Cover and let the dough rest for 30 minutes.

Mix the ground lamb, pumpkin, onion, black pepper, and salt until evenly combined.

Roll the dough thin and cut it into squares.

Place some filling in the center of each square and seal the edges to form dumplings.

Bring the water to a full boil in the base of a steamer.

Arrange the dumplings in the steamer trays with space between them and steam for 35 to 45 minutes, until the dough is tender and the filling reaches 71°C (160°F).
