    Heat the vegetable oil in a deep pot to 175°C (350°F).

    In a bowl, whisk together the all-purpose flour, baking powder, dried thyme, salt, and black pepper.

    Add the egg and water and stir to form a thick batter.

    Fold in the conch meat, onion, green bell pepper, and scotch bonnet chili until evenly mixed.

    Drop spoonfuls of batter into the hot oil and fry until the fritters are crisp and golden brown, turning once so they cook evenly and the centers reach 63°C (145°F).
