Method

In a bowl, mix the all-purpose flour, baking powder, salt, and black pepper.

Add the eggs and water and stir until you have a thick batter with no dry pockets.

Fold in the conch meat, onion, green bell pepper, scotch bonnet chili, and garlic until evenly distributed.

Heat the vegetable oil in a deep pot to 180°C (356°F).

Drop spoonfuls of batter into the hot oil and fry until the fritters are deep golden and cooked through in the center.
