Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the sunflower oil in a pan. Add the onion and cook until soft, then stir in the garlic. Cool slightly.

Mix the onion and garlic with the ground pork, ground beef, white rice, paprika, salt, and black pepper.

Trim the thick stem from each sour cabbage leaf. Add filling, fold in the sides, and roll tightly.

Oil the bottom of a heavy pot, line it with the bacon, and arrange the rolls snugly with the bay leaves.

Whisk the tomato paste into the meat stock and water, season with the salt, and pour over the rolls until mostly covered.

Bring to a boil, then cover and simmer very gently until the cabbage is tender, the rice is cooked, and the filling reaches 71°C (160°F).

Rest the rolls briefly in the liquid.
