    Heat the vegetable oil to 175°C (350°F) in a deep skillet.

    Fry the green plantains in batches until pale golden and just tender, then drain.

    Dissolve the salt in the water.

    Flatten each warm plantains piece between two flat surfaces.

    Dip each flattened piece briefly in the salted water, then pat it thoroughly dry to prevent the hot oil from splattering.

    Return the plantains to the vegetable oil and fry until crisp and golden. Drain and serve hot.
