Method

Heat the vegetable oil to 180°C (350°F) in a deep pan over medium-high heat.

Fry the plantains pieces until they are pale golden and just tender, then lift them out and drain briefly.

Flatten each piece into a thick disc using the bottom of a cup or a plantain press.

Return the flattened plantains pieces to the hot vegetable oil and fry until deeply golden and crisp.

Drain well, season with the salt, and serve hot with the hot sauce.
