Plantains

  • 800g
    Plantain (peeled and cut into thick rounds)
  • 400ml
    Vegetable Oil
  • 6g
    Salt

Dip

  • 10g
    Garlic (minced)
  • 200ml
    Water
  • 20ml
    Distilled White Vinegar

    Heat the vegetable oil to 175°C (350°F). Fry the plantain for 3 to 4 minutes, until pale golden and just tender, then drain.

    Flatten each piece of plantain into a thick disc.

    Return the flattened plantain to the hot vegetable oil and fry for 2 to 3 minutes, until crisp and deep golden. Drain and sprinkle with the salt.

    Stir the garlic, water, and distilled white vinegar together until combined.

    Serve the hot plantains with the dipping sauce on the side.
