Method

Peel the cassava root thickly, remove any fibrous core, and rinse the chunks well. Do not eat or taste raw cassava.

Bring the water to a boil, add the cassava root, and boil uncovered for 25 to 35 minutes, until completely tender with no firm or bitter-tasting center.

Drain well, discard the cooking water, and return the cassava to a warm bowl or mortar.

Add the salt and pound or mash until smooth, stretchy, and free of lumps.
