    Heat the extra virgin olive oil in a pot over medium heat, then add the onion and carrot and cook until softened.

    Stir in the cumin powder and turmeric powder and cook briefly until fragrant.

    Add the red lentils and vegetable stock, bring to a boil, then reduce the heat and simmer for 25 to 30 minutes, until the lentils are very soft.
