    Heat the extra virgin olive oil in a pot over medium heat. Add the onion, carrot, and celery, and cook until softened.

    Stir in the garlic, turmeric powder, and cumin powder and cook briefly until fragrant.

    Add the lentils and pour in the vegetable stock. Bring to a boil, then lower the heat and simmer until the lentils are very tender.
