Method

Heat the extra virgin olive oil in a pot over medium heat. Add the onion and carrot and cook until softened, then stir in the garlic.

Add the lentils, vegetable stock, cumin powder, turmeric powder, salt, and black pepper. Bring to a boil, then lower the heat and simmer until the lentils are very soft.

Blend the soup until smooth, or leave it slightly textured if you prefer.
