Method

Blend the soaked split peas with the water assigned to the paste until thick and fairly smooth.

Grind the cumin seeds, then mix them with the all-purpose flour, baking powder, active dry yeast, cumin powder, turmeric powder, chili powder, black pepper, and salt.

Stir in the split-pea paste, water assigned to the batter, onion, and garlic to make a thick batter. Let it rest until slightly puffy.

Heat the vegetable oil in a deep, heavy pan to 175°C (350°F).

Drop spoonfuls of batter into the oil without crowding the pan and fry until crisp, deep golden, and cooked through.
