    Water

    Onion (finely chopped)

    Green Chili (finely chopped)
  • 15g
    Fresh Coriander (finely chopped)

  • 500ml
    Vegetable Oil

    Soak the split peas in the water until softened, then drain very well.

    Grind the soaked split peas into a coarse paste. Add only a tiny splash of the soaking liquid if the mixture is too dry to move.

    Mix in the onion, green chili, fresh coriander, curry leaf, cumin seeds, salt, and baking powder until evenly combined.

    Heat the vegetable oil in a deep pan to 180°C (350°F).

    Shape small portions of the batter and slip them carefully into the hot oil. Fry until golden brown and cooked through, turning as needed.
