Method

Mash the banana in a bowl until mostly smooth.

Whisk in the eggs and whole milk.

Add the all-purpose flour, baking powder, the white sugar from the batter, and the salt, then mix just until a thick batter forms.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Drop spoonfuls of batter into the hot oil and fry until the fritters are puffed and golden brown, turning once during cooking.

Lift the fritters out and drain them well.

Mix the white sugar from the coating with the cinnamon powder in a shallow bowl.
