Batter
- 250mlWater (cold)
- 250gAll-Purpose Flour
- 8gBaking Powder
- 2pcsEgg (beaten)
- 80gOnion (finely chopped)
- 50gScallion (finely chopped)
- 15gFresh Parsley (finely chopped)
- 1pcsScotch Bonnet Chili (finely chopped)
- 2gBlack Pepper

Simmer the salted cod in the water until it flakes easily. Drain, remove any bones, flake it, and taste for saltiness.

Whisk the all-purpose flour and baking powder together.

Add the eggs and cold water and whisk until a thick, spoonable batter forms.

Stir in the salted cod, onion, scallion, fresh parsley, scotch bonnet chili, and black pepper. Add the salt only if the mixture needs it.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Drop spoonfuls of batter into the oil and fry in batches until deep golden, crisp, and cooked through.
