- 220gAll-Purpose Flour
- 6gBaking Powder
- 1pcsEgg (beaten)
- 90gOnion (finely chopped)

- 5gScotch Bonnet Chili (finely chopped)
- 8gFresh Parsley (finely chopped)
- 220mlWater

- 2gBlack Pepper
- 700mlVegetable Oil

Place the soaked salted cod in a saucepan with fresh water and simmer until it flakes easily. Drain it well, remove any bones or skin, and break it into small pieces.

Mix the all-purpose flour, baking powder, salt, and black pepper in a bowl.

Stir in the beaten egg and enough of the water to make a thick batter.

Fold in the flaked salted cod, onion, garlic, scotch bonnet chili, and fresh parsley.

Heat the vegetable oil to 175°C (350°F).

Drop spoonfuls of the batter into the hot oil and fry until the fritters are puffed and golden on both sides.

Drain the fritters on paper and serve them hot.
