    Bring the water to a gentle simmer with the cinnamon stick and bay leaf at about 95°C (203°F).

    Add the cocoa stick and whisk until it melts into the liquid and the drink starts to thicken slightly.

    Pour in the whole milk and heat the tea gently to about 85°C (185°F), without letting it boil.

    Stir in the nutmeg, vanilla extract, white sugar, and salt.

    Simmer gently for 2 minutes, then strain if you prefer a smoother drink and serve hot.
