    Lime Juice

    Combine the vegetable oil, lime juice, garlic, chili powder, black pepper, and salt in a bowl.

    Add the goat shoulder and mix until evenly coated.

    Thread the goat shoulder onto skewers and leave it to absorb the seasoning while the grill heats until the goat meat reaches at least 63°C (145°F), then rest briefly.

    Preheat the grill to 230°C (450°F).

    Grill the skewers, turning regularly, until the meat is browned on the outside and cooked through.

    Combine the tomato and onion in a small bowl.

    Serve the grilled skewers hot with the fresh salad alongside.
