Combine the onion, garlic, lime juice, vegetable oil, cumin powder, coriander powder, paprika, chili powder, salt, and black pepper in a bowl.

Add the goat shoulder to the marinade and mix well so every piece is coated. Cover and refrigerate until the meat is well seasoned.

Thread the marinated goat shoulder onto skewers.

Preheat a grill or grill pan to 220°C (425°F).

Grill the goat shoulder skewers, turning regularly, until browned and they reach 63°C (145°F). Rest for 3 minutes before serving.
