Porridge
- 350gWhite Rice (rinsed)
- 700gChicken Thigh (bone-in)
- 150gOnion (finely chopped)
- 10gGarlic (crushed)
- 3gTurmeric Powder
- 10gSalt
- 2gBlack Pepper
- 1.5lWater
- 500mlWhole Milk

Method

Place the onion, garlic, turmeric powder, salt, black pepper, chicken thigh, and water in a pot and bring to a gentle boil.

Lower the heat and simmer around 95°C (203°F) until the chicken is tender and at least 74°C (165°F).

Add the white rice and continue cooking, stirring often, until the grains are very soft and the mixture thickens.

Lift out the chicken thigh, remove the bones, shred the meat, and return it to the pot.

Pour in the whole milk and cook gently, stirring, until the porridge is creamy and smooth.

Melt the ghee and spoon it over each serving just before serving.
