Method

Bring the water to a boil in a saucepan over medium-high heat. Add the lentils and simmer until they are partly tender but still holding their shape.

Stir in the white rice, cumin powder, salt, and black pepper. Cover, reduce the heat to low, and cook until the white rice and lentils are tender and the liquid is absorbed.

Heat the extra virgin olive oil in a wide pan over medium heat. Add the onion and salt and cook slowly, stirring often, until deeply browned and caramelized.

Spoon some of the caramelized onion into the rice and lentils, then pile the rest on top before serving.
