    Heat the extra virgin olive oil in a wide pan over medium heat. Add the onion and salt and cook slowly, stirring often, until the onions are deeply browned and sweet.

    Place the lentils and water in a saucepan. Bring to a boil, then simmer until the lentils are partly tender.

    Add the white rice, cumin powder, salt, and black pepper to the lentils. Stir once, cover, and cook over low heat until the rice is tender and the liquid is absorbed.
