Method

Place the lentils and water in a saucepan and bring to a boil. Reduce the heat and simmer for 15 minutes, until the lentils are partly tender.

Add the white rice, cumin powder, salt, and black pepper to the lentils. Cover and cook gently for 18 to 22 minutes, until the rice is tender and the mixture is soft but not wet.

Heat the extra virgin olive oil in a wide pan over medium-low heat.

Add the onion and cook slowly for 25 to 30 minutes, stirring often, until deeply brown and caramelized.

Spoon the lentils and rice onto a serving dish and top with the caramelized onion.
