Method

Heat part of the vegetable oil in a heavy pot over medium heat. Season the chicken drumsticks lightly and brown it well on all sides, then transfer it to a plate.

Blend the tomato, onion, red bell pepper, and scotch bonnet chili until smooth.

Return the pot to medium heat with the remaining vegetable oil, pour in the blended mixture, and cook until it darkens, thickens, and the raw smell fades.

Stir in the tomato paste, curry powder, dried thyme, bay leaves, salt, and black pepper, and cook until the paste is fully fried into the sauce.

Pour in the chicken stock and water and bring the pot to a brisk simmer around 95°C (205°F).

Add the parboiled rice, stir once, then return the browned chicken drumsticks to the pot. Cover tightly and cook on low heat until the rice is tender and the chicken is cooked through, ensuring the chicken reaches 74°C (165°F).
