Method

Heat the vegetable oil in a large pot over medium heat.

Add the onion and cook until soft, then stir in the garlic.

Add the tomato and tomato paste and cook until the mixture becomes thick and concentrated.

Add the chicken drumsticks pieces and turn them well in the tomato base.

Stir in the carrot, green bell pepper, bay leaves, dried thyme, salt, and black pepper.

Add the white rice and stir so the grains are coated in the sauce.

Pour in the chicken stock, bring to a gentle boil, then cover and cook over low heat until the rice is tender and the liquid has been absorbed.
