    Place the pandanus fruit and water in a saucepan and simmer gently at about 95°C (205°F) until the liquid is fragrant and lightly colored.

    Strain the liquid, return it to the pan, and stir in the palm sugar until dissolved.

    Cool the drink completely, then chill it to 4°C (39°F).

    Stir in the lime juice and serve the cooler over the ice.
