    Heat the vegetable oil in a heavy pot over medium-high heat.

    Season the beef chuck with the salt and black pepper, then brown it in batches so the pieces sear rather than steam.

    Lower the heat to medium, add the onion, and cook until soft. Stir in the garlic until fragrant.

    Add the tomato and tomato paste and cook until the mixture is thick and slightly darkened.

    Return the beef chuck to the pot and pour in the hot meat stock. Bring to a simmer, cover, and cook gently until the beef is nearly tender.
