- 800gSpiny Lobster (split in half lengthwise)
- 120gUnsalted Butter
- 12gGarlic (crushed)
- 6gScotch Bonnet Chili (finely chopped)
- 20mlLime Juice
- 15gFresh Parsley (finely chopped)

Method

Pat the spiny lobster dry and season the cut sides lightly with the salt and black pepper.

Melt the unsalted butter in a wide pan over low heat and keep it below a simmer, about 85°C (185°F).

Add the garlic and scotch bonnet chili and cook gently until fragrant, without letting the garlic brown.

Place the spiny lobster cut-side down in the pan and cook gently, spooning the butter over the meat, until it is opaque, just firm, and reaches 63°C (145°F).

Finish with the lime juice and fresh parsley, then serve immediately with the hot garlic butter.
