Method

Bring the water to a boil in a heavy pot over medium heat.

Whisk in enough cornmeal to make a smooth, loose porridge with no lumps.

Cook for a few minutes, stirring, until the base thickens slightly.

Add the remaining cornmeal little by little, stirring firmly with a wooden spoon until the mixture becomes very thick and starts to pull away from the sides of the pot.

Add the salt and keep folding and pressing the mixture until it is smooth, glossy, and evenly firm.

Cover and let the nshima rest briefly off the heat, then portion it evenly and serve hot.
