Method

Bring the water to a boil in a heavy pot over high heat.

Add the salt, then gradually sprinkle in the corn flour while stirring continuously to prevent lumps.

Reduce the heat to low and continue stirring and folding until the mixture becomes very thick.

Cook gently, pressing and turning the porridge, until it is smooth and pulls away from the sides of the pot.

Shape the porridge into a mound and serve warm.
