Method

Mix the all-purpose flour and salt. Add the egg and water, then knead until smooth. Cover and let the dough rest.

Boil the potato in the water until tender, then drain well and mash with the unsalted butter.

Heat the sunflower oil in a skillet over medium heat and cook the onion until golden. Stir it into the mashed potato, then season the filling with salt and black pepper. Let the mixture cool.

Roll out the dough and cut it into rounds. Spoon filling into the center of each round, fold over, and pinch the edges closed firmly.

Bring the water to a boil, add the dumplings in batches, and cook until they float and the dough is tender.
