Method

Place the potato in a saucepan, cover with the water, and boil until tender. Drain well and mash until smooth.

Cook the onion in the sunflower oil over medium heat until soft and lightly golden, then mix it into the potato with the salt and black pepper. Let the filling cool.

Mix the all-purpose flour with the salt, then add the egg and water. Knead until smooth, cover, and let the dough rest.

Roll out the dough, cut it into rounds, place filling in the center of each, and seal the edges tightly.

Bring the water and salt to a gentle boil at about 98°C (208°F). Cook the dumplings until they float and the dough is tender.

Drain the dumplings, coat them with the unsalted butter, and serve with the sour cream.
