    Spinach (finely chopped)
  • 300g
    Tomato (finely chopped)
  • 150g
    Onion (finely chopped)
  • 10g
    Garlic (crushed)
  • 1pcs
    Scotch Bonnet Chili (crushed)

    Red Palm Oil
  • 250g
    Smoked Fish (bones and skin removed, flaked)

    Salt
  • 300ml
    Water

    Wash the spinach thoroughly, drain, and chop coarsely.

    Heat the red palm oil in a pot over medium heat. Add the onion and cook for 5 minutes.

    Stir in the garlic and Scotch bonnet chili, then add the tomato and cook for 8 to 10 minutes, until reduced.

    Add the smoked fish and water and simmer for 5 minutes.

    Stir in the spinach and salt. Cover and cook for 8 to 10 minutes, until the spinach is tender and the stew is thick.
