Method

Heat the red palm oil in a pot over medium heat. Add the onion and cook until softened.

Stir in the garlic and scotch bonnet chili and cook briefly until fragrant.

Add the spinach and cook until it starts to wilt. Pour in the water and add the bouillon cube.

Cover and simmer for 10 to 12 minutes, until the greens are tender and the liquid has reduced slightly.

Add the smoked fish and simmer until the fish flavors the sauce.

Crack the eggs over the simmering sauce, cover, and cook for 8 to 10 minutes, until the whites and yolks are set and the eggs reach 71°C (160°F).
