9 steps
  1. 01

Heat the ghee in a heavy pot over medium heat until shimmering.

  2. 02

Add the onion and cook until deeply golden and sweet.

  3. 03

Stir in the garlic and fresh ginger, then cook just until fragrant.

  4. 04

Add the beef chuck and cook until the pieces are browned on several sides.

  5. 05

Stir in the tomato and cook until it breaks down into a thick base.

  6. 06

Add the cumin powder, coriander powder, black pepper, green cardamom, cinnamon sticks, cloves, and bay leaves. Stir for a moment so the spices bloom in the fat.

  7. 07

Pour in the hot beef stock, add the salt, and bring everything to a gentle simmer at 95°C (203°F). Cover and cook until the beef chuck is nearly tender.

  8. 08

Add the basmati rice and stir once to distribute it evenly. Cover tightly and cook at a gentle simmer until the rice is tender and the liquid is absorbed.

  9. 09

Turn off the heat and let the pilaf rest, covered, for several minutes. Fluff gently before serving.
