Method

Bring the water to a boil in a heavy pot.

Stir in the salt.

Lower the heat and add the sorghum flour gradually while stirring constantly with a sturdy spoon to keep the mixture smooth.

Cook, stirring firmly, until the porridge becomes very thick and starts to pull away from the sides of the pot.

Cover and let it steam over very low heat until the texture is smooth and fully cooked.

Turn the asida onto a serving plate and shape it into a mound before serving.
