Method

Cover the white beans with the cold water and refrigerate for 8 hours, then drain.

Put the soaked white beans in a pot with the boiling water and bay leaves. Bring to a boil, then simmer until almost tender.

Heat the oven to 200°C (400°F).

Heat the sunflower oil and cook the onion until soft and golden.

Stir in the paprika and tomato paste and cook briefly without scorching the paprika.

Combine the white beans, cooked onion, salt, and black pepper in a baking dish. Pour in the water and enough reserved bean cooking liquid to keep the mixture loose.

Bake until the beans are tender, the top is lightly browned, and the sauce has thickened.
