Method

Follow each step in order. Ingredient names are highlighted as you go.

8 steps
  1. 01

Cover the white beans with the cold water and leave for 8 to 12 hours. Drain and rinse.

  2. 02

Place the soaked white beans in a pot with the water and bay leaves. Simmer until almost tender, adding hot water only if needed to keep the beans covered.

  3. 03

Preheat the oven to 200°C (400°F).

  4. 04

Heat the sunflower oil in a pan over medium heat. Add the onion and cook until soft and lightly golden.

  5. 05

Stir in the paprika and tomato paste and cook for 30 seconds.

  6. 06

Transfer the beans and enough of their cooking liquid to cover them narrowly to a baking dish. Stir in the onion mixture, dried parsley, black pepper, and salt.

  7. 07

Bake for 35 to 45 minutes, until the beans are fully tender, the sauce has thickened, and the top is lightly browned.

  8. 08

Rest for 10 minutes before serving.
