Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the ghee in a heavy pot over medium heat. Add the onion and cook until soft and lightly golden, then stir in the garlic.

Add the tomato and tomato paste and cook until thickened.

Add the chicken and season with the baharat, cumin powder, coriander powder, turmeric powder, black pepper, salt, cinnamon stick, bay leaves, and clove.

Pour in the chicken stock, bring to a gentle simmer, cover, and cook until the chicken reaches 74°C (165°F).

Lift the chicken onto a tray and keep warm. Strain the broth if desired and measure the amount needed to cook the rice.

Add the basmati rice to the pot, cover tightly, and cook over low heat until tender and the liquid is absorbed.

Rest the rice for 10 minutes, then place the chicken over it.

Scatter over the raisins, almonds, and fresh coriander and serve.
