    Warm the vegetable oil in a heavy pot over medium heat, then cook the onion until soft and lightly golden.

    Add the garlic and tomato paste and cook until fragrant and slightly darkened.

    Add the chicken thigh and turn it in the base so it is well coated.

    Stir in the turmeric powder, cumin powder, coriander powder, black pepper, and salt.

    Pour in the chicken stock, then add the bay leaves, cinnamon stick, cloves, cardamom seeds, and dried limes. Simmer until the chicken is nearly cooked through.

    Lift out the chicken and keep it aside, then stir the basmati rice into the pot.

    Return the chicken to the pot, cover, and cook gently until the basmati rice is tender, the liquid is absorbed, and the chicken reaches 74°C (165°F).

    Steep the saffron threads in the water for a few minutes, drizzle it over the rice, cover again, and let the dish rest before serving.
