Steep the saffron threads in the water until the color blooms.

Mix the all-purpose flour, active dry yeast, white sugar, salt, and cardamom powder in a bowl.

Add the saffron liquid and water and whisk until thick and smooth.

Cover the bowl and leave the batter in a warm place until it doubles and looks bubbly.

Warm the date syrup gently and stir in the rose water. Keep it warm but not boiling.

Heat the vegetable oil to 180°C (350°F). Drop small spoonfuls of batter into the oil and fry until the dough balls are evenly deep golden.
