    Harees Wheat (rinsed and soaked)
  • 1.2kg
    Whole Chicken
  • 150g
    Onion (finely chopped)
  • 10g
    Garlic (crushed)
  • 12g
    Salt
  • 3g
    Black Pepper
  • 2.5l
    Water

    Place the soaked harees wheat in a large pot with the chicken, onion, garlic, salt, black pepper, and water.

    Bring the pot to a gentle boil, then reduce the heat so the liquid stays at a quiet simmer around 95°C (203°F). Cook until the chicken is very tender and at least 74°C (165°F) and the wheat begins to collapse.

    Lift out the chicken, remove the bones and skin, and shred the meat. Return the meat to the pot.

    Continue cooking and stirring until the harees wheat becomes very soft and the mixture thickens into a porridge.

    Beat or stir the porridge vigorously until the chicken and wheat blend into a smooth, creamy texture.

    Melt the ghee and spoon it over the hot porridge just before serving.
