Method

Stir the warm whole milk, active dry yeast, and a little of the white sugar together and leave the mixture until foamy.

Combine the bread flour with the remaining white sugar and the salt, then add the yeast mixture, the eggs, and the melted unsalted butter. Knead until the dough is smooth and elastic, then cover and let it rise in a warm place until doubled.

Simmer the poppy seeds with the water until softened and thick. Let the mixture cool, then stir in the honey, raisins, and lemon peel.

Roll out the risen dough into a rectangle, spread the filling evenly over it, and roll it up tightly from the long side.

Place the roll seam-side down on a lined baking tray and let it rise again until slightly puffy.

Bake at 180°C (350°F) until the roll is golden brown and baked through.

Mix the powdered sugar with the lemon juice until smooth, then drizzle it over the cooled roll.
